Mango cake for easter ? Oh yes, why not ?
Soooo … I step out of my house after 13 days of locking myself indoors, obeying government orders !
For the first time since almost 2 weeks, I open my gate, walk out, take a 15-minute walk to the expressway, see scanty vehicular traffic and dash back to my house.
I grab my car key and make for the road.
People, 5-minute drive to Nazir, my fruit vendor’s stand and I see these irresistible organic nicely ripened mangos. No sport, looking imported but trust me, it is local breed.
I had watched afoodiejournal earlier today make mango cakes so I got myself quite a bunch and added Nazir’s lovely bananas for good measure.
I need to make the lovely Mango cake that I just watched. I will have quite a lot left for my good old smoothies and why not, mango juice as well ! I should swap the mango base for banana soon
Say What !!! I made the delicious mango cake and the whole house ditched lunch ! Try it, you will thank me later.
Fruits are selling cheep because patronage is low. People are not stepping out to buy so I’m not sure Mallam sold them this cheap because “you be my customer, madam.” It pays him to sell them cheap than throw them way when they go bad.
Too much “turenchi,” let’s enter the kitchen jooor !
Ingredients and measurements:
- Flour: 1/2 cup
- Baking soda: 1tsp
- Baking powder: 1 tsp
- Eggs: 2
- Sugar: 3/4 cup
- Mango Puree: 1/4
